Enchiladas
Gather and prep ingredients:
- flour tortillas
- shredded cheese
- beans (any variety; whole, mashed, or refried)
- corn (optional; frozen or canned)
Spray the bottom of a 9 x 13 pan with oil and preheat the oven to 350°.
Assemble the enchiladas by mixing most of the enchilada sauce with the meat and other filling toppings. Put filling ingredients into each tortilla. Fold in the ends and roll it closed. Place each one seam side down in the 9 x 13 and pour the remaining sauce over the enchiladas. Top with cheese
Bake for about 20-30 minutes. Remove when cheese is melted and the sauce bubbles.
