White Chicken Chili
Chop:
- 1 onion
- 2 or 3 boneless skinless chicken breasts
Over medium heat, cook chicken and onion in oil until lightly browned.
Add:
- 2 Tbs minced garlic
Stir for a minute, then add:
- 2 cups water
- 2 Tbs chicken soup flavoring
- 4 oz mild salsa verde
- 2 tsp cumin
- 2 tsp oregano
- 1/2 tsp cayenne pepper
Bring to a boil and then add:
- 3-4 cups cooked beans
Simmer for 20-30 minutes or until chicken and onion are fully cooked.
Notes
Green chilies may be used instead of salsa.
Any kind of beans is fine. Mash 1 cup of them before adding if desired.
All seasonings are flexible.
