Tamale Pie

Chop:

   - 1 onion

   - 1 green pepper


With onion and green pepper, cook:

   - 1 lb ground beef


Drain the fat.


Add and simmer:

   - 1 1/2 Tbsp taco seasoning

   - 1/2 tsp salt

   - 2 cups diced tomato or salsa

   - 2 cups beans (any kind, refried is ok)

   - 2 cups corn


Put meat mixture in a 9 x 13 pan as the bottom layer.


Preheat oven to 375°.


Mix together and cook over medium heat:

   - 1 cup cornmeal

   - 1 cup milk

   - 1/2 cup green salsa

   - 1 tsp salt

   - 2 cups cheese


Stir constantly and cook for 6-8 minutes or until thickened to about the consistency of thick pancake batter.  (Add a little bit of water if it gets too thick.)


Spoon cornmeal mixture over meat mixture.

Bake for 25-30 minutes. Remove from oven and allow to cool for 5-10 minutes before serving.

Notes

Some of the cheese may be kept out of the topping and reserved to melt on top during the last 5 minutes of bake time.


Filling ingredients are all flexible.


Sliced jalapeños may be added to the top before baking.
