
Taco Soup
Chop:
- 1 onion
- 1 green pepper
- 2 cloves garlic
- 1-2 lbs chicken (if using)
Put a 5 quart pot or larger on medium heat. If using chicken, heat up 1 Tbs oil before adding it. Otherwise, cook in the pot:
- 1 lb ground beef
Add the onion and green pepper to the meat as it cooks. When the meat is cooked through, drain excess fat.
Add the garlic and cook for a minute more.
Stir in:
- 3-4 cups beans
- 2 cups corn
- 2 cups diced tomatoes
- 1 (8 oz) can tomato sauce
- 1/4 cup green salsa
- 2 Tbs taco seasoning
- 1 Tbs bouillon
- 1 tsp chili powder
- 1 tsp salt
- 2 cups water
Bring the soup to a boil then reduce heat to low and simmer for at least 20 minutes. Salt to taste.
Serve with:
- shredded cheese
- tortilla chips
Notes
Beans can be any combination of black, kidney, pinto, etc.
If you want it spicier, substitute jalapenos for the green salsa and/or add hot sauce to taste.
