Taco Mac and Cheese

Chop:

   - 1 onion

   - 1 green pepper


In the 5 quart pot, cook onion and green pepper together with:

   - 1-2 lbs ground beef


When beef is browned and onion is translucent, drain the fat.


Remove the beef to a pie plate and reserve for later.


In the same pot, make a white sauce with:

   - 3 Tbs butter

   - 3 Tbs flour

   - 1 1/2 cups water or milk


Add:

   - 1 1/2 lbs macaroni 

   - 1 Tbs taco seasoning

   - 1 tsp salt

   - 1/4 tsp pepper

   - enough water or milk to cover the macaroni


Stirring often, heat to a low boil and cook for an additional 8-10 minutes, until macaroni is tender.


When macaroni is about half done, add:

   - 2-4 cups cooked beans

   - 1-2 cups corn

   - up to 1 cup salsa


Add more water or milk as needed.


Turn off heat and add a handful at a time:

   - 16 ounces cheese, shredded
