
Sweet Potato Fries
Preheat the oven to 425° and line cookie sheets or a 9 x 13 baking dish with parchment.
Wash, and cut into 3/8" wide fries:
- 2 lbs sweet potatoes
Put the potatoes into a medium bowl and rinse with cold water until the water runs clear. Drain water, refill bowl with fresh water, and allow potatoes to rest in the cold water for at least 10 minutes.
Drain the potatoes, pat them dry with a paper towel, and spray or drizzle with oil,.
In a small bowl, mix:
- 3 Tbs cornstarch:
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp salt
Add the seasonings to the potatoes, then spread the fries on the parchment paper.
Bake for 15 minutes, remove from oven, flip all fries with tongs, and put them back in the oven. Bake again until the fries are dry and slightly browned, about 16-19 more minutes. (Start checking at 10 minutes.)
Notes
Cookie sheets are better than a 9 x 13 dish and It is best to space the fries as far apart as possible.
The size of the fries affects cooking speed.
