
Sugar Cookies (drop)
In a medium bowl, mix together:
- 2 cups flour
- 2 tsp baking powder
- 1/2 tsp salt
In a large bowl, whisk:
- 2 eggs
To the eggs, add:
- 3/4 cup sugar
- 2/3 cup oil
- 2 tsp vanilla
Stir the dry ingredients into the wet ingredients and mix until blended. Cover and chill for 30 minutes (longer is fine).
Preheat the oven to 400° and line cookie sheets with parchment paper.
Drop dough by rounded teaspoonfuls 2 inches apart onto sheets.
Bake until lightly browned, about 7-8 minutes. Remove to cooling racks after a couple of minutes.
Notes
If desired,
- Press the cookies with the bottom of a glass dipped into sugar or a sugar/cinnamon mixture.
- Add a tsp grated lemon zest with the vanilla.
- Substitute 3/4 cup brown sugar for the 3/4 cup white sugar. (Don't flavor with lemon zest if you do this and if you press them, use white sugar for that part.)
