Spinach Balls

Cook according to package directions:

   - 20 oz frozen chopped spinach


Cool and drain spinach.


Add to spinach:

   - 3/4 cup softened butter

   - 6 eggs, beaten

   - 2 cups dry seasoned stuffing mix

   - 1 cup Parmesan cheese


Roll or scoop into walnut sized balls.


Bake at 350° for 12-15 minutes.

Notes

Make into a casserole but adding 1-1.5 lbs cooked ground beef (cooked with chopped onions) and baking in a 9x13 until set. Start checking after 20 minutes.
