Spaghetti Pie

Preheat oven to 350°.


Grease a 9 x 13 pan.


In the 5 quart pot, boil:

   - 14-16 oz spaghetti

   - 1 tsp salt

   - enough water to cover the pasta


Once the water boils, cook for 7-9 minutes until pasta is tender, then drain.


Add to pasta:

   - 2/3 cup shredded cheese

   - 2 eggs

   - 1 tsp salt

   - 1/2 tsp garlic powder


Meanwhile,  brown in skillet:

   - 1-2 lbs ground beef

   - 1 onion, chopped

   - 1 green pepper, chopped


Drain the meat and add to pan:

   - 2 tsp garlic powder

   - 1 tsp salt

   - 1 tsp cumin

   - 2 cups salsa or diced tomatoes


Bring to a boil and cook for 3-5 minutes.


Assemble by pressing the pasta into the 9 x 13 pan evenly, then spooning the beef mixture onto pasta. 


On top, add:

   - 2 cups shredded cheese


Bake for 15-20 minutes.

Notes

Substitute spinach for the green pepper, cooking it separately and then adding it with the salsa/tomatoes or as a separate layer between the pasta and the meat.
