Soft Ginger Cookies

Preheat oven to 350°. Prepare parchment-lined cookie sheets.


Combine:

   - 2 1/4 cups flour

   - 2 tsp ginger

   - 1 tsp baking soda

   - 3/4 tsp cinnamon

   - 1/2 tsp cloves

   - 1/4 salt


In a separate bowl, beat:

   - 3/4 cup butter


To butter, add and cream:

   - 1 cup sugar


To butter and sugar, beat in:

   - 1 egg

   - 1/4 cup molasses


Gradually mix the dry ingredients into the wet ingredients.


Shape into 1 inch balls. Roll each in a bowl of:

   - 2 Tbs sugar


Place 2 inches apart on cookie sheet and bake until light brown and puffed (about 10 minutes). Let cool on cookie sheet for a couple of minutes before transferring to a wire rack to cool.
