Scandinavian Almond Cookies

Preheat the oven to 325°.


Cream together:

   - 1/2 cup butter

   - 1 cup sugar


Add and mix until fluffy:

   - 1 egg

   - 1/2 tsp almond extract


Stir in and mix well:

   - 1 3/4 cup flour

   - 2 tsp baking powder

   - 1/4 tsp salt


Divide the dough into 4 equal pieces, rolling each piece into a log about 12 inches long. Place 2 rolls about 4-5 inches apart on a cookie sheet. Flatten each log by hand until it is about 3 inches wide. Repeat with the other 2 rolls.


Brush the tops with:

   - 2 Tbs milk


Sprinkle and/or arrange on top:

   - 1/2 cup sliced almonds


Bake 12-15 minutes or until edges are slightly brown. A few minutes after removing from oven, cut them diagonally into 1/2 inch - 1 inch slices. Cool.


Stir together the icing ingredients:

   - 1 cup powdered sugar

   - 1/4 cup milk

   - 1/4 tsp almond extract


Drizzle icing over the cookies.
