Salsa

Prepare:

   - 8 cups peeled, seeded, and chopped tomatoes


(Peel by cutting a shallow "x" on the bottom and then submerging in boiling water for about a minute. Place in cold water for a couple of minutes and then peel. Seed by cutting each peeled tomato in half and then sqeezing over a bowl. Chop with knife or imersion blender.)


Dice:

   - 2 green peppers

   - 2 onions

   - 2 jalapenos


Add tomatoes, peppers, and onions to a large pot along with:

   - 12 oz tomato paste

   - 8 oz tomato sauce

   - 1/3 cup vinegar

   - 1/3 cup lime juice

   - 2 Tbs sugar

   - 2 Tbs salt

   - 2 Tbs garlic powder

   - 2 Tbs cayenne pepper


Bring to a boil, reduce heat, and simmer uncovered until desired thickness (30-60 minutes). 

Notes

Adjust spiciness by adding, reducing, or omiting jalapenos and/or cayenne pepper.


Freezes well.
