Pumpkin Soup (sweet)
In the medium saucepan, stir together:
- 2 cups pumpkin puree
- 1/4 cup brown sugar
- 2 Tbs oil
- 1 tsp molasses
- 1/2 tsp salt
- 1/4 tsp cinnamon
- 1/4 tsp cloves
- 1/4 tsp nutmeg
While stirring, heat over medium heat until it starts to bubble. Then, turn to low and simmer, stirring often.
Meanwhile, in the smaller sauceman, heat until steaming (do not boil):
- 3 cups milk
Once pumpkin mixture has simmered for at least 10 minutes, stir in the steamed milk. Simmer for 2-3 more minutes.
Serve with whipped topping, if desired.
