Pulled Pork (instant pot)
Mix together in a small bowl:
- 1 Tbs brown sugar
- 2 tsp paprika
- 2 tsp garlic powder
- 2 tsp onion powder
- 1 tsp salt
- 1 tsp pepper
- 1/2 tsp cumin
- 1/4 tsp cayenne (optional)
Cut into 3-4 inch pieces:
- 3 lbs boneless pork roast (or similar)
Season the pork with the spice mixture and put on a pie plate.
Whisk together:
- 1 cup barbeque sauce
- 1/3 cup apple cider vinegar
- 1 cup water
- 1 tsp hot sauce
- 1 tsp chicken soup base
Turn on the sauté feature and heat:
- 2 tsp oil
Brown the pork on all sides in batches; remove to pie plate.
Using a wooden spoon, deglaze the instant pot with
- 1/4 cup water
Add the meat and sauce into instant pot. Close and seal lid. Cook on high pressure for 40 minutes. Allow to release naturally for 10 minutes.
Remove the meat and shred. Stir in
- 1-2 more cups barbeque sauce
