Potato Salad (sweet pickle)

Wash and boil until fork-tender:

   - 1 1/2 pounds potato


Hard boil:

   - 2 eggs


Chop:

   - 1/4 cup red onion

   - 1/2 cup sweet pickles

   - 1 green onion


Make dressing with:

   - 1/3 cup mayo

   - 2 Tbs sweet pickle juice

   - 1 Tbs apple cider vinegar

   - 1 Tbs chopped parsley

   - 1/2 tsp salt

   - dash pepper


Peel and chop eggs. Add eggs to dressing. Add chopped vegetables to salad. Chop potatoes and fold into dressing. Add more salt as needed.
