Potato Lasagna

Preheat oven to 400° and grease baking pan.


Chop:

   - 1 onion

Cook onion together with:

   - 1 lb ground beef or Italian sausage

Drain beef and add:

   - 15 oz pasta sauce

   - 1 tsp salt

   - 1 tsp Italian seasoning

Simmer for 5-10 minutes.


Cook according to package directions, then drain:

   - 10 oz frozen spinach


Wash and slice into 1/8 inch rounds:

   - 2 lbs potato


Mix together:

   - 15 oz ricotta cheese

   - 1/2 cup parmesan cheese

   - 2 eggs


Grate:

   - mozzarella cheese, 3 cups grated


Layer in baking pan:

 1.  1/3 of the potatoes, overlapping is ok

 2.  half the egg mixture

 3.  half the spinach

 4.  half the meat mixture

 5.  1 cup mozzarella cheese

 6.  1/2 of the remaining potatoes

 7.  remaining egg mixture

 8.  remaining spinach

 9.  remaining meat mixture

10. 1 cup mozzarella cheese

11. remaining potatoes

12. remaining mozzarella cheese


Cover loosly with foil and bake for 45-60 minutes (until potatoes are tender).

Potatoes can be russet, sweet, or any other.

Sauce can be storebought or homemade with any recipe.

Meat can be all ground beef, all Italian sausage or a mixture.

Cook time is a wide range and will depend on potato type and thickness.
