Maple Oatmeal Muffins

Prepare 18 muffin trays with paper liners and preheat oven to 375°.


In a large bowl, mix together:

   - 2 cups oatmeal

   - 1 cup milk


While the oats and milk sits, mix together in a separate bowl:

   - 1 1/2 cups flour

   - 1 tsp cinnamon

   - 1/2 tsp nutmeg

   - 1 tsp baking powder

   - 1/2 tsp baking soda

   - 1/2 tsp salt


Add to the milk mixture:

   - 1/3 cup oil

   - 3/4 cup brown sugar

   - 1/2 cup maple syrup

   - 1 tsp vanilla

   - 2 eggs


Mix the dry ingredients into the wet ingredients until just combined.


Fille the muffin cups about 3/4 full.


Bake for about 15 minutes until a toothpick inserted in the middle is almost clean.
