Mandarin Salad

Mix together:

   - 1/4 cup oil

   - 2 Tbs vinegar

   - 2 Tbs sugar

   - 1 Tbs parsley

   - 1/2 tsp salt

   - a couple drops hot sauce

   - dash pepper


Drain and add to dressing:

   - 1 (11-15 oz) can mandarin oranges


Refrigerate dressing.


Cook together over low heat, stirring constantly with a wooden spoon until the sugar is melted and the almonds are coated:

   - 1/4 cup sliced almonds

   - 4 tsp sugar


Put candied almonds on wax paper to cool, then store at room temperature.


Chop and put into salad bowl:

   - 1/2 head lettuce

   - 2 or 3 ribs celery

   - 2 green onions


Right before serving, add dressing and toss salad. Add almonds.

Original recipe from Grandma McGee called for half and half iceberg and romaine lettuce.
