Lasagna Soup

Chop:

   - 1 onion


In the 5 qt pot, brown:

   - 1 lb ground beef or sausage (or combination)


Add the onion to the meat as it browns along with:

   - 1 tsp salt


Drain beef and add:

   - 2 Tbs minced garlic


Cook for a minute or two and then add:

   - 2 Tbs tomato paste

   - 24 oz tomatoes

   - 2 Tbs parsley

   - 2 Tbs chicken soup base

   - 1/2 tsp oregano


Cook for a minute and then add:

   - up to 7 cups water

   - 12 oz lasagna noodles


Bring to boil and cook until noodles are tender.


Add:

   - 2 cups fresh spinach leaves


Make cheese mixture to use as a topping:

   - 10 oz ricotta cheese

   - 1 cup mozzarella cheese (shredded)

   - 1/2 cup parmesan cheese
