Egg Noodles

In a medium bowl, mix:

   - 2 eggs

   - 2 cups flour

   - 2 Tbs milk

   - 1 tsp salt

Knead dough for 8-10 minutes. It's ready when a ball forms and dough is no longer lumpy, but smooth.

Let dough rest uncovered for 5-10 minutes.

Dust the counter with flour and roll out the dough, turning often, until it's 1/4 inch thick.

Slice the dough into size you'd like and shape as desired.

Cook in salted, boiling water or soup for 3-5 minutes, test for doneness by tasting.
