Cornbread (no eggs)

Preheat oven to 375° and grease a 9x13 pan.

Mix together and let sit for 5 minutes:

   - 2 1/2 cup milk

   - 2 Tbs vinegar

On the stovetop, melt:

   - 1 cup butter

In a separate bowl, whisk together:

   - 2 cups cornmeal

   - 2 cups flour

   - 2/3 cup sugar

   - 4 tsp baking powder

   - 1 tsp baking soda

   - 1 tsp salt

Add the liquids to the dry ingredients and whisk well - for at least a couple of minutes.

Pour batter into the 9x13 and bake until a toothpick inserted in center comes out clean. (Start checking at 30 minutes.) Allow to cool a little bit before cutting.
