Corn Flake Cookies

Preheat oven to 350°.


Cream:

   - 1 1/4 cups shortening

   - 1 cup brown sugar

   - 1 cup white sugar


Beat in:

   - 2 eggs

   - 1 tsp vanilla


In a separate bowl, combine:

   - 2 cups flour

   - 1 tsp baking soda

   - 1/2 tsp salt

   - 1/2 tsp baking powder


Add to dry ingredients:

   - 2 cups coconut

   - 2 cups cornflakes


Add dry ingredients to wet ingredients and stir.


Drop by spoonfuls onto parchment lined cookie sheet and bake for 8-10 minutes, or until lightly browned.
