
Coleslaw (and variations)
Base Recipe
Prep the vegetables by shredding:
- 6-8 cups cabbage
- 1 1/2 cups carrots
Mix the dressing using:
- 3/4 cup mayonnaise
- 3 Tbs apple cider vinegar
- 1 1/2 Tbs sugar
- 2 tsp mustard
- 1 tsp salt
- 1/2 tsp pepper
Pour the dressing over the vegetables and toss thoroughly to coat. Cover and refrigerate for at least 30 minutes. Toss again before serving.
Taco Variation
Replace apple cider vinegar with:
- 1 1/2 Tbsp lime juice
Replace mustard with:
- 2 tsp taco seasoning
Add:
- 1 cup salsa
- 1 cup corn
- 1 can olives (sliced)
- 1 Tbs finely diced jalapenos
Just before serving, top with:
- corn chips or crushed tortilla chips
Asian Variation
Add to vegetables:
- 3 green onions, thinly sliced
Add to dressing:
- 1 Tbs soy sauce
- 1 Tbs sesame oil
- 1 tsp ginger
Just before serving, top with:
- sesame seed or peanuts
Notes
Cooked, seasoned ground beef or chicken can be added.
