Chocolate-Covered Cherry Cookies

Cream together:

   - 1/2 cup butter

   - 1 cup sugar


Beat in:

   - 1 egg

   - 1 1/2 tsp vanilla


Combine the dry ingredients:

   - 1 1/2 cups flour

   - 1/2 cup baking cocoa

   - 1/4 tsp salt

   - 1/4 tsp baking powder

   - 1/4 tsp baking soda


Gradually add the dry ingredients to the wet ingredients to make a firm batter. Shape into 1" balls and arrange on parchment-covered cookie sheets.


Make an indentation on the top of each cook (a thimble works well) and put onto the tops of the cookies:

   - approx. 48 maraschino cherries (1 per cookie)


For the frosting, melt:

   - 1 cup semisweet chocolate chips


Add to the melted chocolate:

   - 1/2 cup sweetened condensed milk

   - 1-3 tsp marachino cherry juice


Preheat oven to 350°. Spoon approximately 1 teaspoon of the frosting over each cherry. Bake for 10-12 minutes and cool on wire racks.
