Chocolate Chip Cookies (no butter)

Preheat oven to 350°.


Lightly beat:

   - 2 eggs


Mix eggs until creamy with:

   - 3/4 cup oil

   - 3/4 cup brown sugar

   - 3/4 cup white sugar

   - 1 tsp vanilla


Stir in until well mixed:

   - 2 1/4 cups flour

   - 1 tsp baking soda

   - 1/2 tsp salt


Add to dough:

   - 1 1/2 cups chocolate chips


If time, chill dough for an hour.


Shape the dough into balls and place 2 inches apart on a parchment-lined cookie sheet.


Bake until golden brown - about 8 minutes.


After a couple of minutes out the oven, remove to cool on a wire rack.
