Chile Rellenos Casserole
Chop:
- 1 onion
Cook onion with:
- 1-2 lbs ground beef
Drain beef and season with:
- 1 tsp salt
- 1/2 tsp pepper
In a 9 x 13 dish, layer:
- 1 cup green salsa
- 2 cups shredded cheese
Top with meat mixture and add:
- 1 cup green salsa (additional)
Preheat oven to 350°.
Combine and beat until smooth:
- 3 cups milk
- 1/2 cup flour
- 1 tsp salt
- 1/4 tsp pepper
- 8 eggs
- a few drops hot sauce
Pour milk mixture over meat mixture and bake until knife inserted just off center comes out clean (about 40-50 minutes). Cool and cut into squares.
Notes
Original recipe called for green chilies.
Chicken may be substituted for the beef.
