Chicken Fritters

Dice into 1/3"-1/2" pieces:

   - 3 chicken breasts


Set chicken aside and mix together in a separate bowl:

   - 2 eggs

   - 5 Tbs mayo

   - 1/3 cup flour

   - 1 1/3 cups mozarella cheese

   - 1 1/2 Tbsp dill

   - 1/2 tsp salt

   - dash pepper


Add the chicken to the batter, cover, and refrigerate at least 2 hours.


To cook the fritters, heat the skillet over medium heat and add:

   - 2 Tbs oil


When the oil is between 325° and 375°, use the large cookie scoop to drop 6-7 balls of batter into the skillet. Use the back of the scoop to flatten each fritter. Cook them uncovered for 3-5 minutes, then flip them over and cook the other sides for about 3 more minutes. Remove to a paper towel lined dish.


Repeat until all the batter is used, making sure there is enough oil and the right temperature for each batch.

Notes

Serve with a sauce.
