Cheddar Puffs
Grate:
- 4 oz cheese
In a sauce pan, bring to boil:
- 1 cup water
- 1/2 cup butter
- 1/2 tsp salt
On medium heat, add all at once:
- 1 cup flour
Stir rapidly with a wooden spoon until it forms a dough ball that pulls away from the sides of the pan. Remove from heat and stir while cooling for a few minutes, until it is cool enough that the eggs won't cook when added.
Add one at a time, stirring completely after each one:
- 4 eggs
Add the cheese along with:
- 1 tsp thyme
Preheat oven to 425° and line a cookie sheet with parchment paper. Scoop out balls of tablespoon size dough and arrange at least an inch apart on the cookie sheet.
Bake for 10 minutes at 425°, then for another 15 minutes at 350° or until lightly golden.
