Calzones

Preheat oven to 425° and line baking sheets with parchment paper.


Divide the pizza dough into 8 equal balls. Roll or stretch them into 6-8 inch circles, about 1/4 inch thick. Load 1/2-3/4 cup of the fillings on one half (see below), keeping a 1-inch boarder. The filling should be no taller than about 1/2 of the dough circle. Roll and crimp the edges with your fingers or a fork. Cut 2-3 small slits on top, brush with an oil or egg wash and bake for 20-25 minutes.


Layer the fillings:

   - sauce

   - cheese

   - meat

   - vegetables

   - a little more cheese

Notes

If you make larger calzones, increase baking time to compensate.
