Buttermilk Biscuits

Mix together:

   - 2 cups flour

   - 1 Tbs sugar

   - 1 Tbs baking powder

   - 1 tsp salt


Cut into small pieces:

   - 1/2 cup butter (cold)


In a measuring cup, mix and allow to sit:

   - 3/4 cup milk

   - 1 tsp lemon juice


Using a pastry blender, cut the butter into the flour mixture and then add the milk mixture all at once.


Form the dough into a ball and roll in onto a lightly floured surface until it's a 6"x9" rectangle. Cut the rectangle into thirds. Stack the thirds on top of each other and rool again until it's another 6"x9" rectangle.


Cut biscuits and put on a parchment-lined cooking sheet. Briefly roll the scraps together for another biscuit or two.


Bake at 400° until golden brown, check after 8 minutes and turn sheet if they're cooking unevenly.

Notes

Handle the dough as little as possible to keep the butter as cold as possible.


You may use buttermilk instead of the milk-lemon mixture.
