Burrito in a Pot

Chop:

   - 1 onion

   - 1 green pepper


Cook onion and pepper in the 5 qt pot along with:

   - 1-2 lb ground beef

 

Drain beef and season with:

   - taco seasoning

   - salt


Add:

   - 2-3 cups uncooked rice

   - 3 cups cooked beans (pinto, red, black, and/or kidney)

   - 1-2 cups diced tomato or salsa

   - enough water to cover everything


Cook on medium-high heat until it starts to boil, stirring regularly. Then, turn the heat to low and simmer until rice is cooked. If the rice starts sticking to the bottom of the pot, the heat is too high.


Season to taste.


Serving options:

   - tortillas

   - chips

   - cheese

   - salsa

   - sour cream

Notes

Ingredient amounts are flexible. Canned or frozen corn may also be added.
