
BBQ Chicken
Preheat oven to 400° (or 375° for a whole chicken). Line a 9 x 13 with foil and place a wire rack on it.
Make the seasoning mix:
- 1 tsp salt
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp pepper
- pinch cayenne pepper
Pat dry paper towels:
- 3-4 lbs chicken (whole, drumsticks, thighs, breasts, wings, etc.)
Rub chicken with:
- 2 Tbs oil
Season chicken evenly with the seasoning mixture.
Bake until the chicken reaches an internal temperature of 165°.
Drumsticks/thighs - 35-45 minutes
Breasts (boneless) - 20-25 minutes
Wings - 30-40 minutes
Whole chicken - 60-75 minutes
While the chicken is cooking, make the BBQ sauce.
Remove chicken from oven when it's almost done (about 160°) and brush generously with BBQ sauce on all sides. Return to oven and bake until chicken is fully cooked and sauce is carmelized and sticky.
Let rest for 5-10 minutes and serve with extra BBQ sauce on the side.
