Apricot Nut Bread

Prepare:

   - 4 1/2 cups dried fruit, cut into small pieces


Preheat oven to 300 degrees and grease 2 loaf pans.


Mix together:

   - 1 1/2 cups flour

   - 1 tsp salt

   - 1/2 tsp baking powder

   - 1/2 tsp baking soda


Add and mix together:

   - 1 1/2 cups brown sugar


Add prepared fruit along with:

   - 3 cups chopped walnuts


In a separate bowl, mix:

   - 6 eggs

   - 2 tsp vanilla


Pour egg mixture over fruit/nut mixture and stir until blended.


Bake for up to 1 1/2 hours. (Start checking after an hour.) Allow to cool for 5 minutes, then run a sharp knife around the side edges of the pan and invert so the bread falls out.

Notes

Recipe as it came to me called for:

   - 1 1/2 cups dried apricots, cut into quarters

   - 1 1/2 cups pitted dates, cut into quarters

   - 1 1/2 cups dried mangoes, cut to match the apricots


I use date pieces instead of whole dates. Raisins, peaches, cranberries, and/or pineapple can also be used.


Nuts can be different, too - pecans are a good option.
