
Apple Fritters
Peel, core, and dice:
- 2 apples
Whisk together:
- 1 1/2 cups flour
- 1/4 cup sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1 1/2 tsp cinnamon
Make a well in the center and add:
- 1/3 cup milk
- 2 eggs
- 3 Tbs applesauce
Stir just until combined and fold in the apples.
In heavy skillet, heat:
- 1 1/2 inches oil
Set out paper towels to drain the fried fritters.
To fry the fritters, drop about 1/4 cup batter into hot oil, spreading it out as you drop it. Cook about 2 minutes and turn to cook the other side for 2 more minutes. Allow to drain on paper towels.
Set out wire racks with additional paper towels underneath.
In a separate bowl, whisk together the glaze using:
- 2 cups powdered sugar
- 1/4 cup milk
- 1/2 tsp vanilla
Dip each fritter into the glaze, turning to get all sides. Place on wire racks to dry and drip.
